After watching this terrific presentation by Christen Meindertsma on the ubiquity of pig parts, you will forgive yourself for ever thinking that the sole function of a pig in the food chain is to provide pork chops and bacon.It also caused me to realize yet again that although industrial agriculture is lousy at producing meat that tastes great, there is no way it can be accused of not being nose-to-tail.
I probably do not need to add that Ms. Meindertsma is very easy on the eyes.

Chocolate Covered Bacon?
I don't consider myself to be a food prude, but when I run across stuff like chocolate covered bacon my reaction makes me think that I might need to lighten up a bit. This stuff looks like pure junk.

Salt Cured Ham
This is from a Berkshire hog. It was cured in salt only and aged for 12 months and two weeks. I took it down today. It lost 2.3kg of water or 27% of its initial weight during the aging process.
