The orange and the cardamon have highly complementary aromas that translate in the salami as "pork and citrus." It sells very well so I assume that the mixture has broad appeal.

Thank you. Sorry about that. I just needed it in context. I rarely cook pork, so my brain doesn't instinctively know the possible flavor combinations as it would for say... pastrami or corned beef.
