Lamb Coppa

A nice little roast cut from the nape of the neck of the black faced lamb I butchered today.

So is the coppa the loin looking thing? Surely it doesn't include the bone.

Lou, Yeah. It's the chunk of meat on top of the bones. The coppa is a group of muscles that run along the nape of the neck (bones to the left) and does not include the bones.
