Fat is a flavor? - Boing Boing


The author of this article made a pretty serious mistake. The study did not confirm that fat is a "flavor," rather it found that fat is a "taste." Flavor is the combined effect of sensation from the taste buds in the mouth and olfactory nerves in the nose. Taste signals come from the taste buds only and are: salty, sweet, sour, bitter, umami and now allegedly "fatty."

I often wonder from where some research get their funding. I also wonder why and how it comes that some findings get un-deserved coverage.

I think the author does not make that distinction.

Only those of us who obsess about such things are even aware of the difference in definitions. The sensations he studied were clearly "taste" in the way we use the term.

Fat in any food tends to stick around in the mouth longer, it also covers up some scents but it does have a scent of its own. It helps to keep the flavors on your taste buds longer, and really does improve the overall experience of any food.

Whether or not its a flavor isn't as important as proper usage in any food.
