Pagan Xmas Dinner



The ancient Romans, some of whom I knew personally and who were very nice people, were very keen at the sort of thing you see going on in this picture. They loved to stuff big things with little things that were in turn stuffed with even littler things.

I have always thought of the practice as a cheap culinary trick that was designed more to impress guests with how much meat a host could give away, than something that was created to highlight the intrinsic qualities of the animals to be consumed. And I've never seen or heard anything to the contrary that would cause me to change my mind about this.




Oh yeah, sure you are going to eat it chef.

I've always been curious about turduckens, but never so curious as to want to spend a day or two prepping, boning, and inserting animals into other animals.

Ok so...we start with a whole boned out humanely raised and slaughtered Ayershire cow, then do we go to a calf, or straight to the hog....

There is a chapter in Don Quixote de La Mancha where Don Quixote and Sancho wander into a wedding feast where an ox filled with pigs and birds is being roasted. It quite a scene.

Ah the turduckhens! Is it of cajun descent? a bit gluttonous for me. how can i justify saying thats gluttinous while i will gladly make a foie fat vinnaigrette for a frise salad? How are things down on the farm? Am heading over to Powells bookstore to buy and fetishize Pork and Sons.....
